I love Tim Ho Wan in HK! Although I've yet to have bad dimsum in HK, you probably can't go wrong with any of them.

Yes definitely Tim Ho Wan or Ding Tai Feng! Those are the best dim sum places

Butao Ramen - all over, but I went to the one in Shatin has the most flavorful broth ever
Kanizen - specializes in Japanese style crab preparations in Wanchai
Wong Chi Kee - crab congee with tons of roe-y goodness
Mi-Ne Sushi - has innovative sushi like Seared and Sea Salt varieties - get the scallop options!
Hop Hing - in Kowloon Bay - amazing street food - get the crispy chicken, typhoon crab, or razor clams
